Apple Cheesecake
ingredients
- Crust: 1 c. graham cracker crumbs
- 3 T. sugar
- 2 T. finely chopped pecans
- 1/2 t. cinnamon
- 1/4 c. butter
- Filling: 3 (8oz) pkgs cream cheese softened
- 3/4 c. sugar
- 3 eggs lightly beaten
- 3/4 t. vanilla
- Topping:
- 2 1/2 c. chopped peeled apples
- 1 T. lemon juice
- 1/2 t. cinnamon
- 1/4 c. sugar

Crust: Combine together and pat in the bottom of a 9" springform pan. Place on a baking sheet and bake for 10 minutes, 350 degrees. Place pan on a wire rack to cool.

Filling: In a large mixing bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low speed just until combined. Stir in vanilla. Pour over the crust.

Topping: Toss apples with lemon juice, sugar, and cinnamon; spoon over filling. Return pan to baking sheet. Bake 55 to 60 minutes or until center is almost set. Cool on a rack for 10 minutes. Run a knife around the edge of the pan to loosen.

Finishing: Drizzle with 4 T. caramel topping. Cool for 1 hour. Chill overnight. Remove sides of pan. Just before serving drizzle with 2 T. caramel topping and sprinkle with pecans.
