Black Bean Soup

- 1/2 cup chopped carrots
- 1/2 cup chopped onions
- 1/2 cup chopped celery
- 1 can (48 oz) reduced sodium chicken broth
- 1 can (14.5 oz) died tomatoes
- 3 can (15 oz) black beans, drained and rinsed
- 1/2 cup salsa
- 1 can (16 oz) corn, drained and rinsed
- 1 tsp minced garlic
- 1 tsp ground cumin
- 1/2 tsp ground cayenne

1. Sautee onions, carrots, and celery in 2 tsp of olive oil over medium heat for 15 minutes, stirring occasionally. Add garlic, cook for 1 minute longer.

2. Pour in chicken broth, tomatoes, black beans, salsa, and corn. Season with cumin, cayenne, and salt to taste.

3. Bring to a boil, reduce heat to low and simmer for 1 hour.
