Cinnamon Raisin Bread
ingredients
- 1 1/2 C sour cream
- 1 1/2 t baking soda
- 1/2 C unsalted butter, melted
- 1 C sugar
- 2 eggs
- 1/2 C raisins
- 1 3/4 C flour
- 2 t baking powder
- 2 t cinnamon
- 1/2 t salt
- 1/4 C firmly packed brown sugar
- 1/4 chopped walnuts

Preheat oven to 350°. Prepare a 9" loaf pan.

In a large bowl, stir together the sour cream and baking soda. Set aside for 5 minutes. Add the melted butter, granulated sugar, eggs, and raisins. Whisk until blended. Set aside.

In a small bowl, stir together the flour, baking powder, 1 t cinnamon and the salt. Add to the sour cream mixture and stir just until blended.

Spread evenly in the prepared pan. Stir together the remaining 1 t cinnamon, the brown sugar, and walnuts. Sprinkle over batter.

Bake until a toothpick inserted in the center comes out clean, about 65-75 minutes.

Cool in the pan for 15 minutes, then turn out onto a wire rack to cool completely.
