- 1 lb. ricotta cheese
- 2 eggs
- 2 Tbsp. sugar, plus more for rolling
- 1 Tbsp. baking powder
- 1 C sifted flour

Blend ricotta and sugar until smooth. Add eggs (if too dry; add 2-3 Tbsp. milk).

Mix baking powder and flour. Gradually blend flour into ricotta mixture, stirring well.

Cover and let stand one hour before deep frying.

Add to hot oil; must be attended as they cook fast.

Drain on paper towels, roll in sugar.
