Eggplant and Ground Beef Casserole

ingredients

  • 1 large onion
  • 1/2 cup tomato sauce
  • 1/2 cup butter
  • 1/2 cup water
  • 1 pound ground beef
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 medium eggplant

directions

Cut onion into pieces and saute in two tablespoons of butter until yellow. Add ground beef and cook until brown. Combine tomato sauce, water, salt and pepper. Pour over meat mixture. Bring to boil and cook five minutes. Remove from heat, lift meat from sauce with a perforated spoon. Slice eggplant and brown lightly in remaining butter. Place a layer of eggplant and a layer of meat until done. Pour sauce over top. Bake covered at 350° for 20-30 minutes or until eggplant is tender.
