Vodka Cream Sauce

ingredients

  • 1 tbs. extra virgin olive oil
  • 1 tbs.butter
  • 2 cloves garlic, minced
  • 2 shallots, minced
  • 1 cup vodka
  • 1 cup chicken stock
  • 1 32oz can crushed tomatoes
  • sea salt and pepper
  • 16 oz. penne or rigatoni pasta
  • 1/2 cup heavy cream
  • 20 leaves fresh basil, torn

directions

Heat large skillet med heat and oil, butter, garlic and shallots. Gently saute for 3-5 min. Add vodka and reduce by half (2-3 min.) Add chicken stock and tomatoes. Bring to a boil and reduce heat to simmer. Add salt and pepper. While sauce simmers, cook pasta. When pasta is just al dente add cream to sauce. When sauce is bubbly take off heat. Drain pasta and add to cream sauce and toss with basil.
