Old-fashioned Potato Salad

ingredients

  • 9 C red potatoes -- cubed
  • 1/2 C onion -- diced
  • 1/2 C celery -- diced
  • 1/4 C sweet pickle relish -- drained
  • 3 large eggs, hard-boiled -- chopped
  • 1 clove garlic -- minced
  • 3/4 C sour cream, light
  • 1/3 C fat-free mayonnaise
  • 2 tbsp fresh parsley -- chopped
  • 1 tsp dry mustard
  • 3/4 tsp salt
  • 1/4 tsp pepper

    Place potatoes in a dutch oven; cover with water and bring to a boil. Cook 8 minutes or until tender. Drain; Place in a large bowl. Add onion and next 4 ingredients and toss gently.

    Combine sour cream and next 5 ingredients in a bowl; stir well. Pour over potato salad; toss gently to coat. Cover and chill.
