Old-fashioned Potato Salad
ingredients
- 9 C red potatoes -- cubed
- 1/2 C onion -- diced
- 1/2 C celery -- diced
- 1/4 C sweet pickle relish -- drained
- 3 large eggs, hard-boiled -- chopped
- 1 clove garlic -- minced
- 3/4 C sour cream, light
- 1/3 C fat-free mayonnaise
- 2 tbsp fresh parsley -- chopped
- 1 tsp dry mustard
- 3/4 tsp salt
- 1/4 tsp pepper

Place potatoes in a dutch oven; cover with water and bring to a boil. Cook 8 minutes or until tender. Drain; Place in a large bowl. Add onion and next 4 ingredients and toss gently.

Combine sour cream and next 5 ingredients in a bowl; stir well. Pour over potato salad; toss gently to coat. Cover and chill.
