Macaroni and Cheese
Mitzi’s recipe
ingredients
- 8 oz elbow macaroni
- 5 tbsp butter
- 1/2 c all purpose flour
- 3 c milk
- 1/4 tsp grated nutmeg
- 1 tsp salt
- 1/4 tsp black pepper
- 2 c (8 0z) coarsely grated sharp cheddar cheese
- 1 c 4 (oz) chopped American cheese
- 2-3 tablespoons finely chopped pickled Jalapenos
- 8 crushed soda crackers

Preheat the oven to 375. Bring a pot of water to boil and cook macaroni until tender, 10-14 min.Drain

Melt 4 tbsp butter, stir in flour. Cook, stirring for 1-2 min.Pour in in c of milk and stir with a fork to dissolve the flour. Add the remaining 2 cups of milk, the nutmeg, salt and pepper and stir constantly over med. heat for 2-3 minutes. Add the cheeses, stir until melted. Remove from heat. Add Jalapenos. Turn into the buttered pan. Melt the remaining 1 tbsp butter in a small saucepan, add the crackers and toss to coat. Sprinkle the crackers on top of the macaroni. Bake until bubbly and golden brown, 25-30 min
