Enchiladas
You can make these enchiladas with ground beef, shredded chicken or just plain cheese
ingredients
- 12 corn tortillas
- Enchilada Sauce:
- 2 1/2 cups tomato sauce
- 1 cup water
- 1/4 cup finely chopped onions
- 1 teaspoon salt
- 2 teaspoons garlic powder
- Filling:
- 1 1/2 pounds ground beef
- 1 cup chopped onion
- 2 tablespoons flour
- 1/2 pound (or more) grated cheese
directions
Combine all enchilada sauce ingredients in a saucepan and simmer for 10 minutes, stirring occasionally. Remove from heat. For the filling, brown the meat and onions until the onions are translucent and beef is no longer pink. Add the flour and stir. Add 1 1/2 cup of the enchilada sauce to the meat mixture and stir. Remove from heat. Dip the corn tortillas in the remaining enchilada sauce to soften. Lay a tortilla in a 9 x 13-inch baking dish and spoon 3-4 tablespoons of the meat mixture in the center of the tortilla. Top with 3 tablespoons of the cheese, roll tightly and place seam side down in the baking dish. Continue until all enchiladas are formed. Top with the remaining sauce and cheese. Bake at 350 degrees for 25-30 minutes. Serve warm
