  • 1-26 oz bag country style hash browns, thawed
  • 1 cup minced onion, divided
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 T melted butter
  • 2 cups half and half
  • 6 eggs lightly beaten
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 cup shredded Swiss
  • 1 1/2 cup shredded Monterrey jack
  • 2 1/2 to 3 cups Jimmy Dean browned sausage

    Press hash browns with paper towel to absorb moisture. In large bowl combine hash browns, 1/2 cup onion, 1 tsp salt, 1/4 tsp pepper, and press into 9x13 greased baking dish (glass).

    Brush with butter and bake at 425 degrees until lightly browned (20-25 minutes) around edges. Refrigerate if made ahead of time.

    In large bowl whisk half and half, eggs, salt and pepper. Stir in cheese, remaining onion, and browned sausage. Pour over potato crust and bake uncovered at 350 degrees until center is set (35-45 minutes). Let stand covered for 10 minutes.
