Judy's Enchiladas

These are a speciality from Clovis, New Mexico. To make the most authentic enchiladas, purchase El Monterrey Enchilada Sauce, currently available online.

ingredients

  • 2 lb ground beef
  • 2 lb grated Longhorn (or Monterrey Jack) cheese
  • 4 T chili blend (chili pepper, cumin, salt, oregano, garlic and paprika) or chili powder
  • 1/2 t cumin
  • 1 t garlic salt (optional)
  • 1 medium chopped onion
  • Enchilada Sauce
  • 1 package of high-quality corn tortillas

    Brown ground beef and season while cooking. Drain and cool meat. Soften onion in pan and then remove.

    Make enchilada sauce and pour a little in a saute pan. Add one tortilla to the pan, turning to cover in sauce and warm. Sprinkle meat, cheese and onions in center of tortilla, roll and place in a 9 by 12 pan. Repeat until pan is full (adding sauce to pan as needed).

    Pour sauce over rolled enchiladas. Cover the top with grated cheese.

    Bake at 350 until cheese melts and sauce bubbles at the side.
