Broccoli-Swiss Soup
ingredients
- 2 Tbsp minced onion
- 3 Tbsp butter
- 3 Tbsp flour
- 1 1/2 tsp salt
- 2 c milk
- 3 c chicken broth
- 1 10oz frozen chopped broccoli
- 2 c thinly sliced carrots
- 1 c sour cream, room temperature
- 6 oz Swiss cheese, diced
directions
Sauté onion in butter; add flour, salt; add milk; cook until begins to boil. Warm the chicken stock; add broccoli and carrots; cook on low heat until tender; stir in sour cream and cheese; cook until cheese melts on low heat.
