Dustin's Tuscan White Bean Soup
White bean soup with spicy Italian sausage.
ingredients
- 1 pound spicy Italian sausage
- 1 cup onions small dice cut
- 1 cup carrots small dice cut
- 1 cup celery small dice cut
- 1 can cannelloni beans (white)
- 3 cloves minced garlic
- 1/2 tbl dried oregano
- 1/2 tbl dried basil
- 1 bunch greens (kale,collard,or chard)chopped to 2 inch pieces
- 2 tbl olive oil
- 1/2 cup white wine
- Salt and pepper to taste
- 6 cups chicken stalk
directions
In soup pot heat olive oil to medium high heat, brown sausage, and remove from pot. In same pot add garlic, onions, carrots, celery, and dried herbs,reduce to medium heat and saute for about 8 minutes till veggies are soft and fragrant. Add white wine to deglaze pan and cook till almost completely gone. Add chicken stock, sausage,salt and pepper to taste and simmer for twenty minutes with lid on. Add beans and cook for five minutes then add greens and cook for five more minutes, serve immediately.
