Ribs
ingredients
- 1-3 slab baby back ribs
- Phil’s Rub
- Wood chips (hickory, apple, etc...)
- Barbecue Sauce, Phil recommends Show-Me BBQ sauce or Cattleman’s Silver
- 1 Tbs ground black pepper
- 2 tsp cayenne pepper
- 2 Tbs chili powder
- 2 Tbs ground cumin
- 2 Tbs brown sugar
- 1 Tbs oregano
- 4 Tbs paprika
- 2 Tbs salt
- 1 Tbs sugar
- 1 Tbs white pepper

Mixing the rub
Mix all spices together in small bowl.
Seasoning and cooking the ribs

Rub both sides of the ribs with the rub and let stand in the refrigerator overnight.

Soak a couple of handfuls of wood chips in water for 15 minutes. Take one handful and wrap in aluminum foils and poke a few holes in the foils with a fork, make two.

Heat the grill to 225°, use an oven thermometer and the lowest setting on one burner to achieve such a low temperature.

If you have rib rack that will hold the ribs standing up that is best, otherwise put on grill away from the direct flame.

Add packet of wood chips.

Cook for 3-4 hours turning the ribs a couple of times.

After two hours replace the wood chips with another packet.

About 30 minutes before the ribs are done, remove ribs from rib rack and lay directly on grill and cover with barbecue sauce. Turn a couple of time and wipe with more barbecue sauce.
