These cookies are sinful and rich. But I love them!

ingredients

  • 2 c. butter, very cold
  • 1 1/4 c. sugar
  • 1 1/2 tsp. salt
  • 1 3/4 tsp vanilla
  • 1 egg
  • 4 1/4 c. bread flour
  • Icing:
  • 3/4 c. water
  • 1 c. sugar
  • 9 c. powdered sugar
  • 1 c. vegetable oil
  • 3/4 c. light corn syrup
  • 1 1/2 tsp vanilla
  • food coloring

    Preheat oven to 350.

    Make sure butter is very cold. Soften the butter in the mixer. Then add sugar, salt and vanilla. Mix until smooth. Add in egg, mix. Add in flour, mix. When dough is stiff and waxy, place dough in plastic bag and refrigerate. When dough is firm, roll out dough between two pieces of wax paper. Using cookie cutter, cut dough into desired shapes and place on to a parchment lined cookie sheet. Bake cookies for 11-13 minutes. Cool on wire rack.

    ICING:

    Add water, sugar and 1/2 c. of the powdered sugar to a saucepan. Bring mixture to a roiling boil.

    Mix together vegetable oil and corn syrup in a mixing bowl and add the cooked mixture to it. Add remaining powdered sugar (8 1/2 cups) and mix on low speed until all lumps are gone. Add vanilla and desired food coloring, mix well. Use while still warm.

    Pour warm icing over entire cookie. Allow to cool.
