Spicy Pumpkin Granola
A very good granola recipe. Best with milk or vanilla soy milk.
ingredients
- 3 cups old-fashioned rolled oats
- 1 cup pecan pieces
- 1/2 cup slivered almonds
- 1/2 cup canned pumpkin pie mix (not solid-pack)
- 1/4 cup honey or maple syrup
- 3 T. canola oil
- 2 T. packed brown sugar
- 2 t. vanilla extract
- 2 t. cinnamon
- 1/4 t., each, ground ginger, nutmeg, coriander

Spread oats in jelly-roll pan. Toast in 325° oven for 20 minutes, stirring once. Reduce oven temperature to 250°. Pour toasted oats into a large bowl, add pecans and almonds, set aside.

In medium bowl, blend pumpkin pie mix, honey or maple syrup, oil, brown sugar, vanilla and spices. Pour over oat mixture. Toss with two forks to coat.

Divide mixture between two jelly-roll pans, spreading to make a thin, even layer.

Bake at 250° for 30 minutes, stirring twice. Turn off oven, leave pans in oven until cool.

Store in airtight container.
