Apple Pancake
ingredients
- 8 tablespoons butter
- 1/4 cup sugar
- 2 teaspoons cinnamon
- 2 large green apples, peeled and sliced thin
- 1 teaspoon vanilla
- 4 eggs
- 1 cup flour
- 1 cup plus 2 tablespoons milk
directions
Preheat oven to 425. In black iron skillet melt butter. Stir in sugar and cinnamon. Add apples. Cook and stir until transparent, about 5 minutes. Beat the eggs (really well with mixer). Add flour and milk and beat until smooth. Pour the batter over the apples and bake (in skillet), uncovered until pancake is ’puffy’ and golden brown, about 15 minutes. Dust with powdered sugar. Cut into wedges. Serve with syrup.
