Noodle Guck
I don’t think that Mimi’s dish was called Guck. I think that it was christened as noodle guck by the four Napa Atwater kids who were served this filling and cheap dish quite often. It was a popular family dinner.
ingredients
- 1 lb. ground beef (round or chuck)
- 2 medium onions chopped
- 1-2 garlic cloves (to taste)
- 1 1lb can chopped tomatoes
- 1 can kernel corn
- 2 cans cup tamales (Mashed)
- 1 medium pkg. noodles (cooked)
- 1 can pitted olives
- Salt & Pepper to taste
- 1 cup Cheddar cheese, shredded

Brown meat with onions & garlic. Add all other ingredients, except noodles, and cook 1/2 hour or longer.

Add noodles to mixture and place in greased casserole dish.

Sprinkle with shredded cheddar cheese and cook 10 minutes in 375°F oven, until cheese is melted.

The Atwater kids called their grandmother Mimi.
