French Muffins
A great treat to eat while swinging in the shade on a cool afternoon.
ingredients
- 1/4 cup butter, softened
- 1/2 cup sugar
- 1 egg
- 1 teaspoon grated lemon peel (or orange peel)
- 2 cups flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1 cup milk
- 1/2 cup melted butter
- 3/4 cup sugar
- 2 teaspoons cinnamon/ginger (or combination of both)

Preheat oven 375°

Cream softened butter and 1/2 cup sugar till light and fluffy; beat in egg and lemon peel.

Sift together flour, baking powder, salt and nutmeg; add to creamed mixture alternately with milk, beating after each addition.

Fill greased muffin tins 2/3 full. Bake at 375° for about 20-25 minutes.

While hot, dip muffins quickly into melted butter, then roll tops in mixture of 3/4 cup sugar, cinnamon/ginger.
