Sweet Potato Souffle

ingredients

  • 2 c. mashed sweet potatoes (1 lg. and 1 small can of Yams - drained)
  • 1 c. hot milk
  • 1/2 t. salt
  • 1/2 to 1 c. brown sugar (to taste)
  • 3 T. butter
  • 2 eggs
  • 1/2 c. raisins
  • 1 t. nutmeg
  • 1 t. cinnamon
  • 1/2 c. pecans
  • mini marshmallows

    Mash sweet potatoes in a large bowl. Scald the milk and dissolve the sugar and salt in it. Add butter, stirring until melted. Add mixture to the potatoes and mix and beat until thoroughly combined. Separate the eggs. Beat yolks and add to the potatoes. Add nutmeg, cinnamon, raisins, and nuts. Beat the egg whites until stiff. Cut and fold into potatoes.

    Pour into a buttered baking dish. Bake for about 1 hour at 350 degrees until mixture is set and not runny. Add marshmallows to the top and place back in the oven until they are lightly browned.
