seafood chowder
Thick and creamy chowder can be made with whatever fish is on hand
ingredients
- one large onion, diced
- 3 tbs butter
- 3 tbs flour
- 3 cups milk
- 2 medium potatoes
- fish, canned clams, chowder fish, shrimp, lobster, scallops or whatever you have that day
- salt and papper to tast
- dried parlsey or basil

peel and dice postates and put on to boil with water just to cover, boil only until tender - about 5-10minutes

Meanwhile melt the butter in a large saucepan and saute the onion until soft. Add flour to butter and onions and whisk until smooth, add milk and continue to whisk until thickened. Add potatoes and some of the potato water if desired to thin the soup. Last add fish and heat through gently, do NOT let it come to a boil. Even raw fish will cook in only about 10minutes in the hot soup. Season to taste with salt and papper and basil or parsley
