Uptown Bluegrass Salad
Awesome for parties..
ingredients
- 1 pound bacon, cooked and crumbled
- 2 head Romaine lettuce, torn into bite-size pieces
- 1 (14oz) can artichoke hearts, drained and chopped
- 1 large avocado cut into bite-size pieces
- 6 oz freshly grated Parmesan cheese
- Spicy Mustard Dressing
- 1/3 cup chopped onion
- 2 Tbsp cider vinegar
- 2 Tbsp spicy brown mustard
- 1/2 tsp salt
- 1/2 tsp freshly ground pepper
- 3/4 cup olive oil

Salad: Combine bacon, lettuce, artichoke hearts, avocado, and Parmesan cheese in a large bowl; add Spicy Mustard dressing; toss to coat and serve immediately.

Dressing: Process onion and vinegar in a food processor until pureed; transfer to a medium bowl. Whisk in mustard, sugar, salt and pepper. Gradually whisk oil in a slow, steady stream; whisk until thickened.
