Spicy Chicken, Spinach and Pasta Bake

- 8 oz. Penne Pasta
- 2 tsp. Butter
- 1/2 C. Chopped Onion
- 4 Garlic Cloves, minced
- 1/4 C. Flour
- 2 1/2 C. Milk
- 6 oz. Baby Spinach
- 1 1/4 C. Parmesan Cheese (divided)
- 1/2 tsp. Salt
- 1/2 tsp. Freshly Ground Black Pepper
- 2 C. Chopped Cooked Chicken Breast
- 1 1/2. C. Salsa
- Cooking Spray

1. Preheat oven to 350 degrees.

2. Cook pasta according to package directions omitting oil. Drain.

3. While pasta cooks, melt butter in a Dutch oven over med. heat. Add onion and garlic; sauté 4 mins. or until tender. Add flour to pan. Cook 1 min. stirring constantly. Add milk, stirring constantly with whisk. Cook 11 mins. or until thick (takes closer to 30 mins. with nonfat milk). Add spinach, stirring until spinach wilts. Remove from heat; add 1/4 C cheese, salt and pepper.

4. Stir in chicken, salsa and 3/4 C. cheese. Carefully fold in pasta. Spoon mixture into a 13x9" baking dish coated with cooking spray. Sprinkle with remaining 1/4 C. cheese. Bake at 350 degrees for 39 mins. or until bubbly.
