Chard and Bacon Linguine

ingredients

  • 1 lb linguine
  • 6 oz pancetta or bacon, chopped small
  • 1 red onion, sliced
  • 2 bunches red chard
  • 4 Tbs balsamic vinegar
  • 2 Tbs olive oil
  • 2 tsp crushed red pepper
  • 1/4 cup grated pecorino romano

directions

Boil linguine about 2 minutes shy of al dente. Reserve onc cup cooking liquid. Render pancetta in large sauté pan until crispy. Remove from pan and drain on paper towels. Saute onion in pancetta grease until soft, about 8 minutes. Add chard, salt and pepper to taste, red pepper, and 1 cup cooking liquid. Cook 4-5 minutes until wilted. Add balsamic vinegar, and cook 1-2 minutes more. Add pasta and cook 1-2 minutes while pasta absorbs liquid. Remove from heat, sprinkle with bacon, cheese, and plate. Drizzle with olive oil and serve.
