Honey BBQ Sauce
ingredients
- Two 8-ounce cans tomato sauce
- 1 cup ketchup
- 3 tablespoons tomato paste
- 2 cloves garlic, smashed; or 3/4 teaspoon garlic powder
- 1 to 2 shallots, to your taste, minced (in a mini-food processer, if possible)
- 3/4 cup honey
- 3/4 cup preserves or jam, such as raspberry, apricot, peach, plum, or
- orange marmalade
- 2/3 cup firmly packed light brown sugar
- 1/3 cup fresh lemon juice
- 2 tablespoons Worcestershire sauce
- 2 tablespoons Dijon mustard
- 1 tablespoon chili powder, or to taste
- Large pinch of red pepper flakes
- Salt and freshly ground pepper to taste

Put all the ingredients in the cooker, except the salt and pepper; stir to combine. Cover and cook on LOW until thick, 5 to 6 hours.

If the sauce is not thick enough for you, remove the lid, turn the cooker

to HIGH, and cook up to 30 minutes until it reaches the desired consistency.

Season with salt and pepper. Let cool, then transfer to a jar then store,

tightly covered, in the refrigerator up to 2 months.
