  • 2 lbs raw white potatoes (about 4 cups cubed) may be left unpeeled
  • 1 medium onion, cubed
  • 2 large eggs
  • 1/3 cup matzo meal (or flour)
  • 1 teaspoon baking powder
  • 1/2 - 1 teaspoon salt
  • 1’2 teaspoon pepper
  • 1/2 - 1 teaspoon parsley flakes
  • apple sauce or sour cream
  • vegetable or canola oil for frying

    Grind potaotes, onion, eggs with all the other ingredients in the blender (or food processor). Remember to cube potatoes and onions in pieces small enough to grind well in a blender. Mixture will become a loose pancake type batter. Heat about 1/2 inch of oil in a large frying pan. Just like regular pancakes, pour small amounts of batter into a frying pan. Cook about 2-3 minutes on each side - until golden brown on each side.

    Drain latkes on paper towels.

    Eat latkes hot, topped with either cold apple sauce or sour cream.

    Another option: Potatoes and onions can be grated by hand or in a food processor. Squeeze, or drain out liquid. Then add the other ingredients. Drop tablespoonfuls of the mixture into hot oil.
