Banana Pudding Brownies

It’s hard to stop Adam from digging into these right from the oven. He is right beside Ottis salivating for these bad boys to be ready. This is more pudding then brownie, so don’t expect to be able to hold them in your hand.
ingredients
- 4 ounces of caramel chips (Adam’s favorite), or 4 ounces of semi sweet chocolate
- 1 cup mashed, ripe banana (about 2 large bananas)
- 1/3 cup canola oil
- 1 cup sugar
- 1 teaspoon vanilla
- 3/4 cup all- purpose flour
- 1/4 cup cocoa
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- For the Banana Topping layer:
- 1 cup mashed banana
- 2 tablespoons sugar
- 1/4 cup soy milk (you must use this versus regular milk. They will not turn out otherwise)
- 1/2 teaspoon vanilla
- 1 tablespoon cornstarch
- Optional:
- 1 Banana thinly sliced to go on top of brownies after they are baked.

Preheat oven 350, spray a 9 X 13 pan with nonstick cooking spray.

Brownie batter:

Melt chocolate over pot of boiling water in a heat proof bowl (do not burn). Set aside, let cool.

In a large bowl combine mashed banana, oil and sugar. Beat with mixer for 1 minute. Mix in vanilla and melted chocolate.

In separate bowl sift flour, cocoa, baking soda and salt. Add to banana mixture. Mix with hand mixer for 1 minute more.

Banana Topping:

Combine all ingredients and mix with hand mixer.

Spread the brownie mixture into pan. Pour the topping layer over top, spread evenly. Bake for 30 minutes.

Remove from oven and let cool for 15 minutes, then transfer to fridge until fully cooled. Put sliced bananas on top if desired. Enjoy!
