Sauteéd Broccoli Rabé

  • 1 1/2 pounds broccoli rabe
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • Salt
  • Crushed red pepper flakes

    Cut the stems crosswise into 1/2 -inch-long pieces. Coarsely chop the leafy tops. Wash the broccoli rabe well. Drain , but do not shake off the excess water.

    In a large skillet, heat the oil over medium heat. Add the garlic and cook until softened, about 1 minute. Add the broccoli rabe and cook, uncovered, stirring often, until the broccoli rabe is tender, about 12 minutes. Season with the salt and red pepper flakes to taste. Serve hot.

    *You can toss with with hot pasta, douse it with olive oil, sprinkle it with Parmesan cheese.
