Perogies
ingredients
- Dough:
- 2 1/2 cup flour
- 3/4 cup warm water
- 1 egg, well beaten (in the 3/4 c water)
- 1/2 t salt
- 2 T oil
- Potato and Cottage Cheese Filling:
- 1/2 lb dry cottage cheese (aka Farmers Cheese)
- 1 cup mashed potato
- 1 T onion flakes
- salt and pepper to taste
- Sausage Filling:
- 1 lb sausage meat cooked and drained
- optional: add mashed potato and chopped parsley
- Potato and Cheddar Filling:
- mashed potato
- grated cheddar cheese
- herbs (parsley, basil, rosemary...etc)

For Dough:

Mix last 4 ingredients together. Add slowly to the flour. Mix with hands, kneading flour in on a floured board. Roll into long roll 1 to 1.5 inches thick. Cut 1” pieces and roll each into a ball. Roll out 1/8“-1/4” thick and place 1 T of filling on each. Fold in half and press edges together.

For Fillings: Mix ingredients for desired filling.

Cook in boiling salted water. Optional: brown in frying pan after boiling.

Serve with melted butter, bacon bits and sour cream.

To freeze place on tray, cool, freeze, then bag.
