Crab, Chilli, and Coriander Noodles
This is a great, light meal, and would be fun as sort of a second-experience in making a more complex Asian meal. Maybe right after trying Pad Thai.
ingredients
- 2 T. oil
- 4 shallots, finely sliced
- 3 cloves garlic, crushed
- 2 green chillies, seeded and finely sliced.
- 12 oz. fresh crab meat
- 3 T. lime juice
- 3 tsp. grated lime rind
- 1 tsp. caster sugar
- 2 tsp. sambal oelek
- 12 oz. thin dried egg noodles
- 1 T. sesame oil
- 2 T. sweet chilli sauce
- 4 T. chopped fresh coriander

Heat the oil in a large frying pan and add the shallot, garlic, and chilli. Cook for 2 minutes over low heat, until soft. Add the crab meat, lime juice and rind, caster sugar, and sambal oelek. Stir until heated through and season to taste with salt.

Cook the noodles in boiling salted water for 2-3 minutes until tender. Drain well and toss with sesame oil.

Add the crab mixture, sweet Chilli sauce, and coriander to the noodles and gently toss. Serve immediately.
notes
If you can't find sambal oelek, you can substitute cayenne pepper to taste. This will be a major component of heat in the dish, so only add as much as you think will suit your palate.
