Apricot Foldovers
ingredients
Dough- 2 1/4 cups flour
- 1/3 cup sugar
- 1 cup butter
- 1/2 cup sour cream
- 2 egg yolks
- 1 cup dried apricots
- 1 cup water
- 1/2 cup light corn syrup
directions
Filling
1. In a small saucepan, bring apricots and water to boil. Simmer covered for 5 minutes. Food process with the light corn syrup.
Dough

1. In a large bowl mix together flour and sugar. Cut in butter so the dough is coarse and crumbles. Stir in egg yolks and sour cream. Knead dough together and chill for 2 hours.

3. Roll 1/4 of the dough 1/8" thick. Cut into 2 inch squares and add 1/2 teaspoon of filling. Wet the corners and fold over.

4. Repeat process with the remaining dough. Bake at 375 degrees for 10 to 12 minutes on a greased cookie sheet.
