Salmon with Grapefruit, Maple, and Mustard Glaze
ingredients
- Eight 5 ounce salmon fillet
- 2 tsp coarsely ground black pepper
- Glaze:
- 1 cup ruby red grapefruit juice
- 2 tbsp grainy mustard
- 2 tbsp fresh dill
- 1 tbsp coarsely ground black pepper
- 1/4 cup maple syrup
- 2 tbsp olive oil
- 1/2 grapefruit

Combine juice, mustard, dill, pepper, maple syrup, olive oil. Season salmon with pepper. Place salmon on dish and pour 1/2 of marinade over. Let stand 30 minutes.

Heat remaining marinade. Grill salmon 3 minutes per side. Baste with marinade. When done, squeeze juice of 1/2 grapefruit over fish and drizzle with heated marinade.
