spinach, onion and potato Pakoras

Serve with Green Chutney

ingredients

  • 1 tsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp Garam Masala
  • 1/2 tsp cayenne pepper
  • 1/2 tsp fennel seeds
  • 6 cups chopped spinach
  • 1 red boiling potato very finely diced
  • 1 hot green chile
  • 1/3 cup chopped cilantro
  • 2 cups chickpea flour
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1 3/4 cups water

directions

  • 1

    combine spices and grind coarsely. Combine with vegetables, chile, cilantro, flour salt and baking powder. coat everything with flour and add water to make batter

    Pour 3" oil intolarge saucepan and heat to 360. ease scant 1/4 cup or 3 Tbls into hot oil and turn heat down to medium. Cook for 1 minute then turn over and cook another minute. Turn heat back up to high and cook until browned all over. About 5-6 minutes. Remove to paper lined plate with slotted spoon.

    Serve with green, mint and/or tamirand chutney
