Warm Cranberry Glazed Brie
Warm, sweet and soft this is almost like having a fondue without all the work. Perfect for serving with crackers.
ingredients
- 3 cups Cranberries
- 3/4 cup Brown Sugar
- 1/3 cup Currants
- 1/3 cup Water
- 1/8 tsp each of Dry Mustard, Ground Allspice, Cardamon, Cloves and Ginger
- Cheese:
- 1 2.2 lb Brie Cheese Wheel (8’ diameter)
- Crackers, Apple slices, Pear slices

For Marmalade: Combine all ingredients in a heavy saucepan. Cook over medium high heat until most of the berries pop, stirring frequently about 5-10 minutes. Cool to room temperature.

For Cheese: Using a sharp knife cut a circle in top of rind of cheese, leaving a 1/2 inch border of ring. Carefully remove center circle of rind from cheese. Do not cut through side rind. Place in a quiche pan. Spread with Cranberry Marmalade. Can be refrigerated,cover for 6 hours. Bring to room temperature.

Preheat oven to 300. Bake cheese until soft, about 2 minutes. Set cheese on a large platter and surround with crackers and fruit.
