Chocolate Zucchini Cake
This is the most chocolatey moist cake. A delicious snack cake.
ingredients
- 2 1/4 c sifted flour
- 1/2 c unsweetened cocoa powder
- 1 t baking soda
- 1 t salt
- 1 3/4 c sugar
- 1/2 c unsalted butter, room temperature
- 1/2 c vegetable oil
- 2 large eggs
- 1 t vanilla extract
- 1/2 c buttermilk
- 2 c grated unpeeled zucchini (about 2 1/2 medium)
- 1 6-oz package (~1 cup) semisweet chocolate chips
- 3/4 c chopped walnuts

1. Preheat oven to 325F. Butter and flour 13 x 9 x 2-inch baking pan.

2. Sift flour, cocoa powder, baking soda and salt in medium bowl.

3. Beat sugar, butter and oil in large bowl until well blended. Add eggs 1 at a time, beating well after each addition. Beat in vanilla extract. Mix in dry ingredients alternately with buttermilk in 3 additions each. Mix in grated zucchini.

4. Pour in prepared pan. Sprinkle chocolate chips and nuts over.

5. Bake cake until toothpick (or my favorite - bamboo skewer) comes out clean, about 50 min.
