Judy's Super Bowl Lasagna
A once-a-year hearty treat. Dave suggests pairing this with a Chianti or Sangioveses.
ingredients
- 2.5 lb Italian sausage
- 1 lb. ground round
- 1 m onion
- 1 clove of minced garlic
- 4 15-oz cans tomato sauce
- 4 6-ounce cans tomato paste
- 1/2 c brown sugar
- 1 c water
- 2 T chopped parsley
- 2 bay leafs
- 1.5 - 2 c red wine (merlot)
- 1/2 t salt
- 1/4 t pepper
- 1 T oregano
- Ricotta mixture:
- 3 lb ricotta cheese
- 4 beaten eggs
- 1/2 t salt
- 1/4 t white pepper
- 1.5 c Parmesan cheese
- A package of Prince no-boil lasagna noodles
- 2.5 c shredded mozarella

In a dutch oven, brown meats. Add onion, garlic and cook until softened. Add remaining ingredients and simmer 2 hours, stirring occasionally.

Combine ingredients for Ricotta cheese mixture and refrigerate.

Butter a lasagna pan or two 9 by 13 pans. Layer noodles, ricotta mixture, mozzarella and sauce. Aim for 3 layers. End with tomato sauce.

Bake at 375 45-60 minutes, sprinkling with mozzarella cheese after about 30 minutes.
