Zingara Scallop Potato & Grilled Vegetables
Delicious light potato dish-goes well with Gorgonzola Filet Steak
ingredients
- Baking Potatos-6-8
- Cream
- Fresh Garlic
- Onion-vadalia
- Zuccini
- Yellow Squash
- Olive Oil
- Salt and Pepper
- Shredded cheddar cheese

Layer:

Slice potato very thin

Onion-sliced very thin

1 clove fresh garlic minced

Cover with cream and Bake 350 until potatos are soft (approximately 35 minutes)cover top with cheddar cheese, bake til bubbly!

Roasted Vegetables:

slice zuccini and squash 1/4" thick and place on baking sheet-drizzle with olive oil, bake, garnish with parsley

Once potatos are baked, let sit 10 minutes, then slice in squares before serving. Roasted vegetables are served yellow, then zuccini, staggered on the plate-garnish with parsley
