Roasted Spicy Garbanzo Beans
Chickpeas (or garbanzo beans) are one of the earliest cultivated vegetables. During archaeological excavations in the Middle East 7,500-year-old remains of chick peas were found. Domesticated chickpeas have been found in the excavations of pre-pottery neolithic Jericho and preserved in Neolithic pottery at Hacilar, Turkey. In southern France Mesolithic layers in a cave at L’Abeurador, Aude have yielded wild chickpeas carbon dated to 6790±90 BCE. By the Bronze Age chickpeas were known in Italy and Greece. In classical Greece they were called “erébinthos” and eaten as a staple, a dessert or consumed raw when young. The Romans, who called chickpeas “wild cisars”, knew several varieties of chickpeas which they cooked down into a broth and roasted as a snack. Carbonized chickpeas have been found at the Roman legion fort at Neuss, Germany in layers from the 1st century CE, along with rice. Ancient peoples also associated chickpeas with Venus because they were said to offer medical uses such as increasing sperm and milk production, provoking menstruation and urine and helping to treat kidney stones. Garbanzo beans (chick peas) are high in protein and fiber and low in fat, making them a perfect vegetarian food. This recipe is similar to the roasted chickpea recipes of old and produces a spicy, garlic infused, slightly crunchy appetizer or snack for special occasions or for everyday in lieu of chips. Feta cheese may be sprinkled on top after roasting if desired. For spicier roasted garbanzo beans you may add more spices.

- 2-3 tablespoons olive oil
- 8 cloves garlic, mashed into a paste with 1/2-1 teaspoon coarse kosher salt
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon cayenne pepper
- 1 1/2 teaspoon dried or 1 tablespoon fresh thyme, chopped
- 3 (15 ounce) cans garbanzo beans, drained, rinsed, and patted dry
- 1/2-3/4 cup crumbled feta cheese

1. Preheat oven to 350°F.

2. In a large bowl combine, olive oil, garlic paste, cumin, coriander, cayenne pepper, black pepper, and thyme and stir well.

3. Add garbanzo beans to the bowl and stir from the bottom up to coat the beans.

4. Pour garbanzo beans, in a single layer onto a large baking sheet.

5. Bake in preheated oven for 30-35 minutes, until the beans are golden brown. Halfway through roasting use spatula to loosen the beans from the bottom of the baking dish and shake them gently back into a single layer, returning them to the oven to continue roasting.

6. After removing the roasted garbanzo beans from the oven place them in a shallow bowl and toss them with crumbled feta cheese, if desired. The roasted garbanzo beans may be kept in an airtight container, in a cool, dry place, or refrigerated for several days.

If you are using dried herbs in cooking, always release the essential oils in the herbs by first pouring the herb(s) into the palm of your hand and then rubbing your palms together before adding the herb(s) to your recipe.
