Hearty Salmon Chowder
ingredients
- 2 tsp. butter or olive oil
- 1/2 cup each chopped onion and celery
- 1/4 cup chopped green pepper
- 1 clove garlic
- 3 cups diced potatoes
- 1 cup diced carrots
- 2 cups organic chicken stock
- 1/2 tsp each pepper and dill seed
- 1 cup diced zucchini
- 1 can evaporated milk
- 1 can corn niblets
- 2 tins sockeye salmon with juice
- 1/2 cup chopped fresh dill
- 1/2 cup chopped parsley

Sauté 1st four ingredients until vegetables are soft

Add potatoes, carrots, chicken stock, pepper and dill seed

Cook for 20 min.

Add salmon, zucchini, milk and corn

Adjust seasonings

Just before serving add parsley and fresh dill

Can also add canned lobster or crab or fresh salmon
