Nancy's Tiramisu
I’ve made this yummy treat every year - and it always flies right off the dish when I serve it.
ingredients
- 3 Large Eggs
- 1/2 cup Sugar
- 1 cup Espresso
- 2 tbsp. Cognac or Brandy
- 8 oz. Marscapone (Italian cream cheese)
- 1/8 cup Coca Powder
- 20 Ladyfingers - toasted (Italian cookies)

Step 1. Separate eggs. Combine 3 egg yolks, 1 Tbsp. espresso, sugar, and cognac into a large bowl. Beat 2 - 3 minutes. Add marscapone, and stir until smooth.

Step 2. In another bowl, combine 3 egg whites and a pinch of sugar. Beat with electric mixer until stiff peaks form. GENTLY fold into marscapone mixture from step 1.

Step 3. In a shallow bowl, combine remaining espresso and alcohol. Quickly dip both sides of ladyfinger into mixture and create a single layer of dipped cookies on serving dish. Spread 1/2 marscapone mixture over fingers. Make another layer of dipped cookies over marscapone. Finish with final layer of marscapone and coca powder on top.

Refrigerate overnight - serve next day.
