Chicken Spiedini

ingredients
- 3 chicken breasts
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/2 tsp coarse sea salt
- 1/2 tsp. ground pepper
- 1/2 tsp. onion powder
- 1/2 cup coarsely chopped parsley
- 1-2 cups dry bread crumbs
- butter & lemon juice

Cut chicken into 1 1/2 inch cubes. In bowl or zip lock bag marinate with oil, garlic, salt, pepper and onion powder. Toss to coat and refrig at least one hour.

When ready to cook:

prepare very low fire on grill
- 4
coat chicken with bread crumbs and parsley mixed. Thread on skewers. Pieces should be just touching but not tightly together. Grill 8-10 min over low heat turning to brown evenly. When done drizzle with melted butter and lemon juice.

soak wooden skewers 15 min. marinate chicken 1 hour in refrig.
