Oat Bran Whole Wheat Muffins
Husky muffin bulging with fiber. Snack without guilt ; it’s practically a sacrament
ingredients
- 3 cups Oat bran
- 1 cup Whole-wheat flour
- 1 t Cinnamon
- 1 T Baking powder
- 1 t Baking soda
- 1/4 t Salt
- 1/2 cup Brown sugar, packed
- 1 cup Raisins
- 1/2 cup Walnuts, chopped
- 4 large Egg whites
- 1/2 cup Honey
- 1 3/4 cups Nonfat milk
- 1/2 cup Applesauce
- 1/4 cup Salad oil
- 1 t Vanilla

In a large bowl, stir together oat bran, flour, cinnamon, baking powder, baking soda, and salt. Stir in sugar, raisins, and nuts until well blended.

In another bowl, beat to blend egg whites, honey, milk, applesauce, oil, and vanilla. Add egg mixture to dry ingredients and stir just until evenly moistened.

Spoon batter into greased or paper-lined 2 1/2 inch muffin cups, filling to rim.

Bake in a 400 degree oven until muffins are browned and tops spring back when lightly touched, 20 - 25 minutes. Serve hot or cool; when cool, store airtight up to 2 days.
