Ham, Cheese, and Spinach Strata
ingredients
- 2 large day old croissants
- 1 T butter
- 1/2 cup finely chopped onion
- 4 oz. fresh baby spinach leaves, chopped
- 1 cup grated sharp cheddar
- 1/2 cup diced ham
- 3 eggs
- 1 t dijon mustard
- salt & pepper

Butter 9x13 inch casserole dish.

Cut croissants and place on bottom of dish.

Melt butter, add onion, saute over medium low for 5 minutes, stirring often. Stir in spinach and cook until tender or for 4-5 minutes, stirring occasionally.

Spoon the spinach over the croissants. Sprinkle on half of the cheese and all of the ham. Add remaining croissant pieces and the rest of the cheese.

In a mixing bowl, whisk eggs, half and half, mustard, salt & pepper until blended. Ladle liquid evenly over the layers. Cover casserole with plastic wrap and refrigerate it for at least 2 hours or overnight.

Heat oven to 350 degrees. Remove plastic wrap and bake for 45 to 55 minutes or until top is golden brown.

Allow to cool for 10 minutes.
