Buckeye Balls

ingredients

  • 1/2 cup margarine (room temperature)
  • 1 pound confectioner’s sugar
  • 1 1/2 cups peanut butter
  • 1 package (12 oz.) chocolate chips. (semi-sweet or milk chocolate)
  • 2 tablespoons shortening

    Mix margarine, sugar, and peanut butter until smooth. If it cannot be rolled into balls add 2 tablespoons more of margarine. Roll into balls about 1 to 1 1/4 in. Refrigerate for about an hour.

    Put chocolate and shortening in a large glass or Corning Ware dish Microwave for 30 sec. Stir. If still not melted, microwave for another 30 sec. and stir. Repeat until melted. Do not over heat or let any water get in to chocolate. Cool slightly

    Insert a toothpick into each ball and dip in warm chocolate. Do not dip them completely, or you will lose the Buckeye appearance. Place on wax paper and refrigerate.
