Mandarin Chicken
ingredients
- 3 lbs. boneless, skinless chicken breasts
- Garlic salt
- 3 eggs
- 3/4 c. cornstarch
- 1 1/2 c. vinegar (red wine or apple)
- 1/4 c. soy sauce
- 2 c. sugar
- 1/2 c. water
- 1 c. ketchup
directions
Wash and dry chicken with paper towels. Cut breasts into large pieces. Lay out on cookie sheet and sprinkle with garlic salt. Beat eggs with cornstarch to make a batter. Dip chicken pieces into batter and fry in 1/2 inch of oil until golden on both sides. In large saucepan, mix together remaining ingredients (vinegar, soy sauce, sugar, water, ketchup) to make a sweet and sour sauce. Bring to a boil; add chicken and turn gently with a wooden spoon to coat all pieces. Simmer for 10-15 mins until chicken is done. Serve on top of rice with cashew pieces.
