Veal Marsala

ingredients

  • 1 1/2 lb veal cutlets about 1/4 " thick
  • 1 clove garlic
  • 1/3 cup flour
  • 1/4 cup butter
  • 1/2 lb mushrooms, thinly sliced
  • 1/2 cup Marsala wine
  • 1 teaspoon salt and pepper to taste

    Rub meat pieces with garlic and discard garlic. On wax paper, coat cutlets lightly with flour. In 10" skillet over medium high heat, cook meat in hot butter a few pieces at a time until lightly browned on each side. Add butter as necessary.

    Return all meat to skillet arranging evenly. Add Marsala wine, salt and pepper. Reduce heat to low, cover and cook 10 minutes. Add sliced mushrooms and cook another 10 minutes or until veal is fork-tender, adding 2-04 tablespoons water if necessary.
