Mini Pecan Pies
ingredients
- 1 cup butter
- 6 oz. cream cheese
- 2 cups flour
- 2 eggs
- 1 tbsp. butter, melted
- 1 1/2 cups brown sugar
- 1/2 tsp. vanilla
- pinch of salt
- Chopped pecans

Blend butter, cream cheese and flour until smooth; then refrigerate. Mix eggs, butter, brown sugar, salt and vanilla to make filling.

Roll dough into size of walnuts; press into small tart pans. Sprinkle bottom with chopped pecans. Add filling (about 1 tsp.). Sprinkle chopped pecans on top. Tarts should be about 3/4 full. Bake at 350° for 15 minutes, then at 250° for 10 minutes.
