Gazebo Gazpacho
A great summer soup and perfect for Big E’s Oxford tomatoes.
ingredients
- 1 1/2 cups tomato juice or vegetable juice cocktail
- 2 medium tomatoes, peeled and finely chopped
- 1/2 cup finely chopped green pepper
- 1/2 cup finely chopped celery
- 1/2 cup finely chopped, seeded cucumber
- 1/4 cup finely chopped onion
- 1/4 cup snipped chives
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons snipped parsley
- 1 teaspoon salt
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon pepper
- 1 small clove garlic, minced
- 5 drops hot pepper sauce
- Dairy sour cream
- Snipped chives
directions
In a medium bowl, combine all ingredients except sour cream. Cover and refrigerate several hours or overnight. Serve in chilled cups or bowls. Dollop each serving with sour cream and sprinkle with additional chives.
