Cheesy Chicken Roll Ups

ingredients

  • 1 lb skinned and boned chicken breasts (approx 4)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup shredded Parmesan cheese
  • 3 garlic cloves, minced
  • 1/4 cup chopped dried tomatoes (not in oil)
  • 1/2 cup fresh basil chopped
  • 6 plum tomatoes, chopped
  • 2 tsp red wine vinegar
  • 2 tsp olive oil
  • 1/2 of an 8 oz pkg of 1/3 less fat cream cheese
  • Non-stick cooking spray

    Place chicken between 2 sheets of plastic wrap and flatten to 1/4 inch thickness using a meat mallet or rolling pin. Sprinkle evenly with 1/4 tsp of salt and pepper. Stir together cream cheese, 2/3 minced garlic and dried tomatoes. Spread cream cheese over one side of each chicken breast leaving a 1/4 of an inch border. Sprinkle 1/4 cup basil and Parmesan cheese evenly over breasts. Roll up jellyroll fashion and secure with toothpick. Arrange in a pan coated with cooking spray. Bake at 350 for 30-45 minutes or until chicken is done. Remove from oven and let stand for 10 minutes.

    Stir together plum tomatoes, olive oil, vinegar, remaining 1/4 tsp salt and 1/4 tsp pepper, and remaining 1/3 minced garlic, and remaining 1/4 cup of basil.

    Cut chicken into slices and serve with tomato mixture.
