Lucarelli's Gravy - Meatballs, Sausage, and Pork
Many of my friends all want to know how the Lucarelli’s make their savory sauce with meatballs, sausage, and pork. Even if this may take a half a day to make, it is simply the best and you usually have plenty left over to freeze for other occassions! Well, I guess this will no longer be a secret family recipe!
ingredients
- Sauce:
- 1 small/medium Onion, chopped
- 2 Tablespoons of Olive Oil
- 2 Large cans of Tomato Sauce
- 2 Large cans of Crushed Tomatoes
- Fresh Oregano, chopped (can use dry)
- Fresh Basil, chopped
- 1 Bayleaf
- 3 - 5 Cloves of Garlic, chopped
- Salt / Pepper
- Meat:
- 4 PorkChops with bone or Pork Ribs
- 1 Package of Sweet Italian Sausage
- 1 Package of Hot Italian Sausage
- Meatball Ingredients:
- 1 Package of Meatloaf Mix (beef, veal, pork chopped beef)
- 1 - 2 Eggs depending on size of chopped meat; 1 Egg to 1 Lb of meat.
- Salt and Pepper
- Splash of Milk
- Chopped Fresh Parsley (about 2 or 3 Tablespoons)
- Breadcrumbs (plain) or Use your judgement - 1 to 2 Cups

In a large pot, pour some olive oil and place on Medium heat. Chop onions and garlic and saute with salt and pepper until lightly browned. Begin to add canned sauce and oregano; basil and bay leaves. Put on medium low heat, stir often. Continue to add another sauce and tomatoes. Add a can of water also. (4 cans of sauce is a lot; this will make a large sauce, use your judgement.) Put a lid halfway on pot and let it simmer while you prepare your meat.

In a frying pan, add oil and saute porkchops until browned on both sides. Take off excess oil with papertowels and place porkchops in sauce.

Prick Sausages with fork so they won’t splatter. Saute sausages in same oil, blot excess oil with papertowel and also put in sauce.

Meatballs: Mix all ingredients together for the meatballs and form meatballs. Put meatballs in sauce without frying.

KEEP SAUCE ON LOW HEAT AND STIR VERY OFTEN. Keep on low for at least three hours.

This should make a very large amount of sauce. Divide sauce into tupperware containers. Keep available what you need and freeze the rest.
